What is an Armadillo Egg?

Okay, let’s clear the air, as far as I know, there is no such thing as eggs that come from armadillos.

Typically, this is a recipe you can find in the southern states.

An armadillo egg is, is a jalapeño stuffed with cream cheese, wrapped in ground pork sausage, and lastly all of that is wrapped in bacon.

It seems that people that make armadillo eggs also add a bit of barbecue sauce to the outermost layer.

Now that sounds like one hell of an appetizer.

I based my recipe on this to make Baked Bacon Wrapped Armadillo Eggs with a Twist.

What is the Twist?

The reason I did not make a traditional-style armadillo egg is quite simple. My girlfriend does not eat pork and cannot handle the spice of jalapeños.

I could have made the armadillo eggs and not shared them, but I really did not need to have a platter of appetizers for myself. As much as I would like to have had them all to myself, I figured Sabrina might appreciate me sharing.

The first thing I need to substitute was all the pork. Well, not all of it. I did put bacon on my own armadillo eggs. However, instead of using ground pork, I used ground beef instead.

Secondly, I switched the jalapeños out for pickles. You may be wondering how I get the cream cheese in a pickle; do not worry I will explain later.

If you have read my Bacon Wrapped Pickles Stuffed with Cream Cheese recipe, you will notice this recipe has some similarities.

The last thing I did differently than what a lot of people do, was I did not smoke the armadillo eggs. I decided to bake them.

This may not seem like these appetizers have a lot of similarities, but one thing they do have in common is that they are both packed full of flavor and hard to stop eating!

Baked Bacon Wrapped Armadillo Eggs With A Twist

Baked Bacon Wrapped Armadillo Eggs with a Twist! No these are not real armadillo eggs, but they are really tasty! In this recipe, I put my own twist on the southern-style appetizer, which I think you will enjoy!

  • 6-8 Large Whole Pickles
  • 1-2 lbs of Bacon
  • Pit Boss St. Louis Hickory and Brown Sugar Barbecue Sauce Or Your Favorite Barbecue Sauce
  • Cream Cheese and Ingredients
  • 8 oz. Block of Cream Cheese
  • 1 Tsp Kosher Salt
  • 1/2 Tsp Ground Black Pepper
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder
  • 1/8 Tsp Chili Powder
  • 1/8 Tsp Ground Mustard
  • Ground Beef and Ingredients
  • 3 lbs of Lean Ground Beef
  • 1 Egg
  • 2 Tsp Kosher Salt
  • 1 Tsp Ground Black Pepper
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder

Instructions

How To Make Baked Bacon Wrapped Armadillo Eggs

  • Take the entire 8oz. block of cream cheese and place it unwrapped into a small glass bowl.
  • Grab all of the ingredients listed above with the cream cheese and add all of the seasonings to the cream cheese.
  • Take a fork and start mashing in the seasoning and mixing it throughout the cream cheese.
  • After mixing, set off to the side until needed.
  • Place your 3lbs of lean ground beef into a large glass bowl.
  • Add in one whole egg and all the seasonings into the glass bowl with the ground beef.
  • Mix all of the ingredients together until everything is evenly distributed. I usually just use my bare hands to mix it all together. Once again, just set this to the side until needed.
  • Place all of the pickles on a flat surface like a cutting board and take a small knife and cut off one end to each pickle. This should be a rather small chunk to cut off. Take the potato peeler and carve out the center of the pickle. Do not get too crazy. You will want to leave some of the inner pickle.
  • Grab your cream cheese and your pickles, take the back side of the spoon and scoop some cream cheese. Start stuffing the cream cheese into the pickles until all of the pickles have been completely filled.
  • After all of the pickles are filled, take out your hamburger. You will want to grab enough meat to completely cover the pickles.
  • Grab yourself one pound of bacon and start completely wrapping every pickle that has been stuffed and covered in ground beef.
  • Turn your oven on and set it to 275 degrees Fahrenheit.
  • Grab a baking sheet and place a layer of aluminum foil over it. This will hopefully help in the cleanup later.
  • Evenly space the bacon-wrapped armadillo eggs onto the baking sheet and place them onto the middle rack once it finishes preheating.
  • Bake for one hour and check on the armadillo eggs. As long as everything is good, keep baking until you see the bacon is done to your liking. If you want your bacon extra crispy, bake it a bit longer.
  • All you need to do for this is pour some sauce onto the baked bacon-wrapped armadillo eggs that you want sauce on, take the sauce mop, and evenly spread the sauce on the armadillo eggs. Put back in the oven and bake for an extra 10 minutes.
  • Once everything is out of the oven, let the bacon-wrapped armadillo eggs rest for about 10 minutes.
  • Now that they are cooled down a bit, serve them up to your guests and enjoy all of the amazing flavors you packed into one bomb appetizer.

Notes

For the potato peeler, you will want to have an older style one, like the one in the picture. This is necessary in the following steps.
Make sure to seal all of the ground beef together so that there are no openings. The cream cheese can escape through the opening and leave the pickles hollow inside.

Cream Cheese and Ingredients

  • 8 oz. Block of Cream Cheese
  • 1 Tsp Kosher Salt
  • 1/2 Tsp Ground Black Pepper
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder
  • 1/8 Tsp Chili Powder
  • 1/8 Tsp Ground Mustard

Ground Beef and Ingredients

  • 3lbs of Lean Ground Beef
  • 1 Egg

Preparing the Armadillo Eggs

Seasoning the Cream Cheese

Step 1: Take the entire 8oz. block of cream cheese and place it unwrapped into a small glass bowl.

Step 2: Grab all of the ingredients listed above with the cream cheese and add all of the seasonings to the cream cheese.

After mixing, set off to the side until needed.

This is just as quick and painless as mixing the cream cheese.

Step 1: Place your 3lbs of lean ground beef into a large glass bowl.

Step 2: Add in one whole egg and all the seasonings into the glass bowl with the ground beef.

Step 3: Mix all of the ingredients together until everything is evenly distributed. I usually just use my bare hands to mix it all together.

Once again, just set this to the side until needed.

Now like in my case, my girlfriend Sabrina does not eat pork, so I only wrapped half of the pickles in bacon, that way they were evenly split between us.

Baking the Bacon Wrapped Armadillo Eggs

Thankfully after all of this prep work has been done, it only takes an hour to an hour and a half.

Step 1: Turn your oven on and set it to 275 degrees Fahrenheit.

Step 2: Grab a baking sheet and place a layer of aluminum foil over it. This will hopefully help in the cleanup later.

Step 3: Evenly space the bacon-wrapped armadillo eggs onto the baking sheet and place them onto the middle rack once it finishes preheating.

Step 4: Bake for one hour and check on the armadillo eggs. As long as everything is good, keep baking until you see the bacon is done to your liking. This took me all the way to one hour and a half.

If you want your bacon extra crispy, bake it a bit longer.

You really want a flavor explosion? Time to break out the barbecue sauce.

All you need to do for this is pour some sauce onto the baked bacon-wrapped armadillo eggs that you want sauce on, take the sauce mop, and evenly spread the sauce on the armadillo eggs.

Put back in the oven and bake for an extra 10 minutes.

This just helps the barbecue sauce set on the armadillo eggs.

Once everything is out of the oven, let the bacon-wrapped armadillo eggs rest for about 10 minutes.

I do this to make sure no one gets a mouthful of piping hot cream cheese. We have to make sure no taste buds get burnt off so everyone can taste the awesomeness of the armadillo eggs.
