Living in Minnesota, there is nothing more comforting during the winter months (November- March) than potatoes cooked in all sorts of different ways! Not only is it great for the winter months, but cheesy potatoes make the best side dish for a barbecue.
This Top the Tater cheesy potato recipe is a go-to for all our family barbecue gatherings and winter holidays. Make sure to bake more than one pan of this potato casserole loaded with sour cream and top the tater because a single pan just isn’t ever enough for us!
These potatoes are also an easy-to-make cheese potato recipe. It takes quite a little time to bake these potatoes.

Cheesy Potatoes by Sabrina
One of the best parts about this recipe is that it comes from my girlfriend, Sabrina. She does not often do the cooking, since I prefer to cook more than her, but it seems whenever she does, it is a hit.
Thanks to Sabrina, we have these potatoes requested to be made for every family gathering.
In fact, at one particular barbecue where my girlfriend Sabrina and I brought two pans of these cheesy potatoes to share as a side dish.
Sabrina was helping me finish cooking up the first round of burgers and while everyone else started eating, we decided to wait to eat while we cooked up a second round of burgers.

What a Cheesy Mistake!
It took 10 minutes or so to finish the second round of burgers and we headed over to go grab some delicious grub, we were especially looking forward to the potatoes. Low and behold, there was roughly one scoop left of potatoes between the two pans.
I do mean a rough scoop of the casserole was left. You would have to scrape all the edges and bottom to get enough potatoes. We were completely surprised by how fast the potatoes with sour cream and cheese had gone. Thankfully, we had plenty of other food available.
Now if this does not say how good these top-the-tater cheesy potatoes are, we later found out that some people had already had a 3rd serving of easy cheesy potatoes in the 10 minutes it took us to go get food.
There are dozens of variations to this side dish recipe, but this one is our tried and true. It’s definitely a family favorite casserole dish and it’s always devoured quickly! No matter what you serve with it, you’ll absolutely love this cheesy potato appetizer.
One of the best things about this potato recipe is that it’s so easy to make and requires minimal ingredients. That sounds like a win to me!

Equipment
- Oven
- Spatula
- Chef’s Knife Or a knife to finely mince the onion
Ingredients
- 1/2 Cup Butter
- 12 oz Top the Tater
- 8 oz Sour Cream
- 8 oz Cream of Chicken Soup
- 1/3 Sweet Onion
- 32 oz Frozen Hash Brown Potatoes
- 2 Cups Shredded Sharp Cheddar Cheese
- 1 1/2 Cup Shredded Marble Jack Cheese
Instructions
- Take the potato hash browns out of the freezer and set them on the counter to unthaw while you start mixing the ingredients. It is okay if the potatoes are still a bit frozen when being added to the recipe.
- Turn oven to 350 degrees Fahrenheit.
- In a large bowl, take the 1/2 stick of butter and melt it in 30 second increments until it is completely melted.
- Add the Top The Tater, sour cream, chicken soup, and the onion to the bowl with the butter. Mix it all together.
- Pour your frozen potato hash browns and pour them into the bowl and give this casserole a good mix.
- Add your 2 cups of sharp cheddar cheese. Then add the other 1 1/2 cups of Marble Jack cheese. You may add more cheese to this dish but there should be plenty already.
- Once the potatoes and cream mixed in grab your 9×13 baking pan and pour the potato mixture in. Use your spatula to get all the contents. Can’t leave a potato behind!
- Take a little bit of both cheeses and sprinkle some on top. This adds a little bit of that golden brown crunch to the top of the potatoes.
- Put potatoes in the oven and cook at 350 degrees Fahrenheit. It roughly takes about 1 hour to 1 hour 30 minutes to bake the cheesy potatoes recipe,

Yes, you definitely can make cheesy potatoes with real potatoes. The ones I use in this recipe calls frozen potatoes which are real potatoes. I find it better to use frozen potatoes so that they do not turn into much while cooking them in the oven.
Another option is to freeze your own potatoes after cubing them up.
