It’s hard to imagine anyone not enjoying a bite of melted queso. Between the creamy cheese, tender chicken, fresh cilantro, and jalapeños,  you end up with smoked perfection that is irresistible.

 Unless someone is lactose intolerant, I think there is some style of queso dip that at least one person can find to enjoy.

By using different types of cheese, meats, seasoning, and much more, cheese dips can be as versatile as the cook wants. For example, my girlfriend normally loves chicken, especially rotisserie chicken, so that is why I came up with this recipe.

On the other hand, I prefer to eat beef and so I was able to also make myself a beef queso dip that was spicier and used other kinds of cheese. There is really no wrong or right way to make queso.

The most important thing is to make sure that the ingredients you use complement each other for the best meal possible.

Why Rotisserie Chicken?

There is one simple reason that I choose rotisserie chickens for this recipe and it is because I like both dark and light chicken meat. I like that the light meat is easier to shred and there is quite a bit on the chicken, and I like the fat and flavor that comes from the dark meat.

Also, if you are buying a rotisserie chicken as I do from a store, the chicken is fully cooked already and if you shred the meat right when you get home, the skin and meat come off the carcass with ease. When it cools down the chicken skin is much tougher to peel away.

Can You Use Just Chicken Breast?

Loads of people seem to have a preference for which one they like. However, for me, I think it all depends on the recipe that is being used. Most of the time in recipes like dips, I definitely like to have both types of meat.

If you prefer only light meat, like chicken breast, then that is perfectly fine as well. You can also, use just the dark meat, like the thighs if you don’t like the light meat.

There won’t be too much of a difference if you do not use the rotisserie chicken and only use the chicken breast. One downside is that you will have to cook yourself and which will increase the cooking time.

Preparing Pit Boss Smoker For Queso Dip

Setting up my Pit Boss is always a painless task.

Step 1: Clean the wood pellet grill’s grating of any loose debris.

Step 2: Fill pellet hopper full of hickory pellets.

Step 3: Make sure the pellet grill has power and turn the Pit Boss on.

Step 4: Leaving the cooking chamber open, set the temperature to 350 degrees.

Step 5: Once smoke comes out of the cooking chamber, shut the lid and let the internal temperature rise while preparing the smoked queso.

Cooking Smoked Queso Dip With Shredded Chicken

The hardest part about this step is shredding the chicken.

Step 1: Take the rotisserie chicken and pull as much meat off the entire chicken as possible and then shred it.

Joshs Cookhouse Tips: When pulling the chicken meat off, try to make sure not to put any bones, skin, or cartilage with the good meat. We specifically want the meat only for the queso recipe.

Step 2: Place all of the shredded chicken into the disposable 9×13 aluminum pan. Apply several tablespoons of Kosmos Q Dirty Bird rub onto the pulled chicken.

Step 3: Place all of the cheese and cream cheese into the pan as well.

Joshs Cookhouse Tips: Cutting the cheese into cubes will help the cheese melt faster. Also, adding in beer can help thin the queso so it is not so thick.

Step 4: Roughly chop 1 cup of cilantro, dice up 1/4 cup of jalapenos, and add to the aluminum pan along with a can of Rotel Original Diced Tomatoes and Green Chilies.

Step 5: Place the pan of queso onto the wood pellet smoker. Close the lid and let smoke for 15-20 minutes.

Step 6: Check the smoked queso after 15-20 minutes and stir with a wooden spoon.

Step 7: Continue to smoke until the cheese is bubbling along the edges. This will be around 45-60 minutes.

Serving Smoked Queso Dip With Pulled Chicken

Just as easy as it was to smoke this appetizer, it’s just as easy to serve up and eat.

Break open a bag of chips, I prefer scoops, and either start diving into this hot delicious cheesy dip or start letting people serve themselves up.

Ingredients
